food : banana bread

We had some bananas lying around, a bit of searching and combining facets of recipes and this happened. It was really good. I cooked it in our toaster oven (our main oven is busted and we haven't gotten it fixed).

Ingredients

Amount Measure Ingredient
2Mashed bananas (the riper the better)
1CupFlour
0.5CupSugar
0.25CupVegan butter (coconut oil can work)
1Chia egg (see notes)
0.5tspVanilla extract
0.5tspBaking soda
0.25tspSalt

Instructions

  1. Preheat oven to 350°F
  2. Grease a loaf pan
  3. Mash the bananas well in a mixing bowl
  4. In a separate bowl mix flour, sugar, baking soda, and salt
  5. Combine the contents of the bowls and add vegan butter, chia egg, and vanilla extract; mix together until combined, but do not overmix
  6. Pour into the prepared loaf pan and distribute it evenly
  7. Put in the oven for 40–50 minutes (toothpick test or any method you like to check doneness)
  8. Cool for ten minutes in the pan then turn out onto a rack
