food : banana bread
We had some bananas lying around, a bit of searching and combining facets of recipes and this happened. It was really good. I cooked it in our toaster oven (our main oven is busted and we haven't gotten it fixed).

0.25 | Cup | Vegan butter (coconut oil can work) |
1 | Chia egg (see notes) | |
0.5 | tsp | Vanilla extract |
0.5 | tsp | Baking soda |
0.25 | tsp | Salt |
Instructions
- Preheat oven to 350°F
- Grease a loaf pan
- Mash the bananas well in a mixing bowl
- In a separate bowl mix flour, sugar, baking soda, and salt
- Combine the contents of the bowls and add vegan butter, chia egg, and vanilla extract; mix together until combined, but do not overmix
- Pour into the prepared loaf pan and distribute it evenly
- Put in the oven for 40–50 minutes (toothpick test or any method you like to check doneness)
- Cool for ten minutes in the pan then turn out onto a rack
Notes
- To make a chia egg use a spice grinder to grind chia seeds to a powder. In a small bowl add 1 Tablespoon of the chia seed powder and three Tablespoons of water. Let sit for 30 minutes. Just before adding to the recipe stir in a pinch of baking powder.
- This did not rise a whole ton, but was moist and delicious.
- We cooked it the first time for around 45 minutes in the toaster oven on the bottom rack. The top browned a little too much and I started to just catch a whiff of overcooking.burning, so I took it out. It still tasted great.
