food : red tofu and green onions
Using red lentil tofu we can make a simple and delicious dish with a few basic veggies. After all, what good is it to be able to make a "tofu" if you don't have something to do with it.

Instructions
- Air fry the cubes of red tofu. Our toaster-oven/air-fryer works well at 425°F for 18 minutes, but it is funky and your mileage may vary. You could, alternately, pan fry them in a little oil until crisp
- While the red tofu is air frying combine the soy sauce, rice vinegar, sesame oil, and sugar. Whisk together until well combined
- Once the red tofu is done air frying heat up a pan on medium-high heat and add the neutral oil
- Once the oil is hot add the green onion, ginger, and garlic
- When the garlic starts to smell fragrant add the liquid mixture that you prepared earlier
- Add the jalapeno and the red tofu, saute/toss a bit to combine well
- Take off of heat and put into a serving bowl, top with cilantro and sesame seads
- Serve over rice, with noodles, etc.
Notes
- Remember to wash the veggies!
- Take as long as feels right for each step. The longer the various items are on the heat the more cooked down they will get. So if you want fresh snappy onions, go quickly. If you want everything really permeated by the sauce, go quickly. All of the veggies and tofu can be eaten without cooking, so the cooking is more to have a warm meal and combine the ingredients in a pleasing way. You do you with it!
- The measurements above are ballpark numbers, adjust as needed
- Other chilis will do fine, you don't have to use jalapeno. They just happen to be widely available
- I definitely recommend serving it over a nice big helping of rice
